Some cupcakes that I made for a friend's baby shower . . . the new parents are big country fans and I thought that these little "cowboy hat"cupcakes would be perfect. Made my go-to chocolate cake recipe and frosted with chocolate frosting. The cowboy hats were pretty easy...made with a (new!) Pringles Mulit-Grain "Original" chip and Dare Jumbo gumdrop. It helped that I was able to buy the gumdrops in the bulk bins, so that I could pick out just white ones :-) I assembled the "hat" with melted white chocolate. I was going to fashion the "ribbon" on the hat with red licorice laces, but struggled with them (they wouldn't stay glued), so instead, I made a quick blue royal icing and piped it around the base of the gumdrop. Giddy-up!
