Oh, Oreo. I like you.




On a hot summer day, nothing beats a cold slice of frozen deliciousness like ice cream cake. And this one is home made (of course!). For Otto's family party dessert, I made an Oreo Cookie Ice Cream Cake. I started by baking a chocolate cake (also studded with broken Oreo cookies) in a springform pan. After it cooled, I layered on a thick coating of chocolate fudge frosting and cracked a half dozen or so more Oreo cookies on top. I then took 2L of Breyers Cookies and Cream ice cream and put it in my Kitchenaid mixer with another few rows of Oreo cookies ;-) and spread that on top of the cake layer. Back in the freezer for another day.... I removed the cake from the pan and covered the whole thing in a layer of vanilla buttercream, piped a bunch on top and finished it with a cool mess (vs. hot mess) of crushed and halved Oreos and Hershey's Oreo candies. Oreo-overload in the BEST possible way! It was yummy (if I do say so!) and a huge hit! Must make that again...good thing I have this blog to remember how I made it!
