Thanksgiving Bake-arama


Well, it was a busy weekend of baking at my place! Starting with Friday...Carrot Cupcakes with cream cheese frosting! Very Yummy! (Thanks America's Test Kitchen!)

Frosting was easy - 1 pkg cream cheese, 5 Tbsp butter, 1 Tbsp sour cream, dash of salt, 1 tsp vanilla, 1 cup icing sugar. So good!


Dinner was also baking (of sorts)...Homemade pizza with chicken and spinach, fresh cherry tomatoes, goat's cheese and a scratch alfredo sauce!
No recipe, just sort of made the sauce by eye - started off with a rue (flour/butter) in a saucepan, added garlic, added lots of milk until smooth and thickened, and fresh Parmigiano Reggiano (lots). Just enough to coat my dough (yes, it was an Amercica's Test Kitchen recipe).






Next up, breakfast! They were actually really good! Cranberry and Lemon Scones - buttery and crusty on the outside, soft and flaky on the inside. A variation of Ina Garten's recipe from her "at home" book. The recipe is here. Instead of oranges, I used lemons (it was a great combo).









Last, but not least was dessert for Thanksgiving dinner. I made something a bit less expected (as there were already 2 pumpkin pies on the menu)...A four-layer Lemon Cake, with 2 homemade lemon curd layers and a centre layer made of lemon-marscapone fluff (curd mixed with a generous dollop of marscapone). It was pretty lemony! I finished off with a (20 minute) 7-minute frosting that I torched! BTW - the propane torch is definitely my new favorite kitchen gadget!
