Just wanted to share some tips on decorating some plain old cupcakes, and turning them into these sweet little gems.
After baking 24 cupcakes (vanilla in this case), I mixed up a batch of vanilla frosting as follows:
4 sticks of butter (1/2 cup each)
1 tablespoon of good vanilla extract
1/4 tsp salt
4 cups icing sugar
In a mixer, cream the butter, adding vanilla and salt until smooth. Slowly add the icing sugar until combined. Set it on medium high and let it whip for 4-6 minutes until white and fluffy.
Once the cupcakes are completely cooled, spoon a generous teaspoon of frosting on each one, smoothing until flat. Use an offset spatula to make this job easier. (You do not have to go all the way to the edge). Sprinkle some coloured ball sprinkles overtop. Fill a piping bag fitted with a large star tip (I used a 1M) with the remaining frosting. Pipe around the perimeter of the cupcakes with a smooth motion. Voila!
